Estonia, a country in Northern Europe, faces the Baltic Sea and Gulf of Finland. Including more than 1,500 islands, its diverse terrain spans rocky beaches, many lakes and old-growth forest (50% of Estonian land is cowered with forest). The world`s cleanest air (WHO 2011 report) – Estonia benefits from lower population density than most Western and Central European countries, as well as favourable climate and strict air pollution regulations. All of that makes Estonia one of the best birch sap producing location.
Birch sap, containing only 18 calories per 100ml (less than coconut water), has been a traditional beverage in Estonia as well as elsewhere in Northen-Europe and Northen-China and its collected only at the break of winter and spring. Folk uses vary from medicinal use, supplementary nutrition (minerals and vitamins) and cosmetic applications for skin and hair.
Birch sap contains natural carbohydrates, organic acids, fruit acids, potassium, calcium, phosphorus, magnesium, manganese, zinc, sodium, iron and copper, vitamins B (group), vitamin C. Regular consumption of birch water has fortifying and tonic action. Birch sap is commonly known for its detoxifying, diuretic, cleansing and purifying properties. The traditional virtues of birch and its efficient removal of toxic substances from the liver and kidneys have been known and appreciated for ages. There are very few phytotherapeutic ingredients that are capable of targeting the body’s two major cleansing and purification systems at the same time: Toxins that only the liver can process incl. alcohol, saturated fat, triglycerides, food colouring, additives, pesticides, remnants of industrially-processed foods, over-cooked fat, and preservatives. Waste that only the kidneys can eliminate incl. excess salt, uric acid, phosphates, certain medicines, urea, and ammonia.
Thanks to these two cleansing properties, birch sap deeply detoxifies the body, making weight loss easier. Heterosides present in birch sap release methyl salicylate by enzymatic hydrolysis which is analgesic, antiinflammatory and diuretic. The activation of diuresis helps eliminating organic wastes such as uric acid and cholesterol. Birch sap can be used in case of hyperuricemia and hypercholesterolemia and to treat kidney stones. Birch sap is also effective at treatment of stomach and liver ulcer, headaches, bronchitis, cough, and also at rheumatism, radiculitis and arthritis. Above all, birch sap possesses recycling capabilities and stimulates metabolism, it is a fine dietary and refreshing drink. Birch sap is one of best juices you can drink!
